Designed around the collection
Two wine walls and a cigar closet for a home in Palm Beach Gardens, in metal, wood, acrylic and glass, with LED embedded through the racking and an integrated humidor. Drawn for these rooms, and built to them.

Built, not assembled
Most companies build custom cabinetry around modular racking made in bulk. We do not. Each rack is drawn for the room it will live in and manufactured to those measurements.
That is what makes an under-stair room, a high-rise condominium and a 5,000-bottle cellar all possible with the same approach — and why a Dragon Cellars room cannot be reordered from a catalogue.

Preservation
Beautiful is not enough
A wine cellar must also protect what it holds.
In Florida the envelope decides everything. Heat and humidity are unforgiving, a glass wall is a thermal load, and a sealed high-rise gives moisture nowhere to go. These are construction problems before they are equipment problems, and they are settled while the room is still being drawn.

- Around 55°F, held steady. Stability matters more than the number.
- Humidity
- Roughly 70% relative. Swings are what damage a collection.
- Vapour barrier
- Placed correctly, or the room fights the equipment forever.
- Insulation
- Detailed for the wall assembly you cannot open up later.
- Refrigeration
- Housed and planned by us, supplied and commissioned by a specialist.
- Airflow
- So the top of the room and the bottom hold the same conditions.

Those are the habits the company still runs on: plan it, draw it, check it, and do not hand it over until it is right. He founded Dragon Cellars in Madrid in 2007 after failing to find anyone who would build the cellar he wanted in his own home. Seventeen years later the company designs, manufactures and installs from South Florida, and he still draws every racking system himself.

The questions that decide whether you call
- What does a custom wine cellar cost?
- Most projects run from roughly $45,000 to $250,000, depending on size, materials, glazing and whether the room is cooled. The first conversation establishes which end of that you are looking at, before anything is drawn.
- Is there a minimum size?
- Yes. We build from 200 bottles upward. Below that a good wine cabinet or refrigerator is the more sensible answer, and we will tell you so.
- How long does a project take?
- Typically three to five months from approved design to handover, driven mostly by fabrication and by how ready the site is. Design and approval come first, and move at your pace.
- Do you handle the refrigeration?
- We build the room the cooling system depends on — insulation, vapour barrier and the housing the equipment sits in — and a refrigeration specialist supplies and commissions the unit itself. We coordinate them into the build so you deal with one company.
- Do you work outside South Florida?
- Yes. Most of our work sits between Miami and Jupiter, but we have delivered cellars in Madrid, Caracas, Punta Cana and Santo Domingo, and we ship internationally.
- Can you work with my architect or designer?
- Most of our projects arrive that way. We work from their drawings, return a design proposal for approval, and coordinate with the general contractor on site.
